Taco Lasagna
I am getting back on track and ready to share this simple and tasty recipe. Today we are relaxing around our home as we celebrated mother's day yesterday with my mother and Bob's mothers are back in Nebraska. It has been a lovely day and we started to contemplate what to eat. Bob was having a major hankering for tacos and although I love tacos, I wanted to make something interesting to share on the blog. Thus, I came up with this taco lasagna. Hope you enjoy! Happy mother's day! 8 small corn tortillas 1 lb extra lean ground beef 1 small onion, diced 3 large garlic cloves, minced 1 portobello mushrooms, minced [I mince finely to sneak it in past picky eaters] 4oz can diced green chilies [use diced jalapenos if desire more spicy] 1 c canned black beans, washed, drained 1 c canned corn, drained 1/2 t. oregano 1/2 t. chili powder 1/4 t. garlic powder 1-1/4 t. cumin 1/2 t. fresh ground black pepper 1 t. kosher salt 1/2 c plus 3/4 c reduced fat shredded Mexican blend cheese [or could use reduced fat shredded cheddar] 1 c shredded iceberg lettuce avocado diced ** can add Sour cream, tablespoon per serving Preheat oven to 350 degrees. Spray a non-stick skillet with non-stick cooking spray and heat on medium. Add beef, onion and mushrooms and cook until meat is cooked through. Drain if needed, I bought extra lean beef and there was no grease to drain today. Add garlic and cook another minute. Add beans, diced green chilies, corn, oregano, chili powder, garlic powder, cumin, pepper and kosher salt. Mix thoroughly. Spray a 9 x 13 pan with non-stick cooking spray. Lay half of corn tortillas on bottom of pan. Add half of the beef mixture and 1/2 c of cheese. Layer remaining corn tortillas and top with beef mixture and 3/4 c cheese. Bake in oven uncovered for 15 minutes. After cooking sprinkle with diced avocado and lettuce. Slice and serve and add a dollop of sour cream on top of slice. Nutritional content per serving [without sour cream], makes 10. Calories: 228 Fat: 10g Carbs: 18.5g Sodium: 351.6mg Protein: 16.7 Substitutions: Turkey could be substituted for beef, you may just need to add more seasonings. Also, if you want meatless I think you could increase the mushrooms and cook with zucchini. I may try this variation soon and let you know. You could substitute a pre-made taco seasoning packet and omit the dried seasonings. I don't use the pre-made packets as they often contain tomato but they are also very high in sodium and sugar. related searches : Taco
