Tears Over Dancing Queen and A Cup of Chocolate Coffee Mousse

I haven't seen a movie in ages. I think the last movie I saw - in a proper movie theatre - was... *oh dear*. It's been so long I can't even remember. I know I saw something when I was in Qatar. Oooh! Now I remember! I saw Mama Mia with some friends just a little before leaving. I remember crying during the scene of Dancing Queen. *Waaah! Seriously?!!* I must be the only one ever to cry in Mama Mia. And to Dancing Queen at that! *hoo boy! Ok, so maybe I am a little pathetic!* I can't remember my reasons for crying. But I know I did. That much I remember. So... well then, there you go. It wasn't so long ago after all. Whew. That's a relief.



Sometimes I wonder if I my life is as uninteresting as it looks from the outside. Because, looking at it from the inside - right from where I stand - it's pretty busy. But then again, busy doesn't mean interesting. I wonder if I just answered my question right there...?



My girls are crawling around the house, to and from the rooms. Miqu in front, and Daniela following quickly behind. t's actually quite inspiring to see how much fun they get out of it. I'm not sure if Daniela positioned hereself behind her sister because she's giving Miqu some space. It's kinda sweet if that's actually the reason behind it. She's a good big sister. I'm proud of how she's turning out so far.



I guess, at the end of the day, *fun is what you make it*. Now, I've heard that before. I used to think it was a saying said by someone who didn't have much fun and tried to justify the fun he was having, or the lack of it. No - actually, I probably never even gave it much thought. Truth be told, I couldn't care less where the saying came from. As it is, I've got about 10 things to consider, 20 things I need to do, 50 things I want to do, and hundred more that I have quite categorised just yet (coulda-shoulda-woulda) ... that trying to ponder on a saying someone came up with, and probably became famous for, is about as important to me as what time the mailman comes in the morning. *sorry I couldn't think of anything less important to me. Then again, when I'm waiting for something in the post.. what time the mailman comes, becomes something important. So there....*



Pudding, I think, is probably one of the most boring desserts out there. It's lack of texture doesn't appeal to me in any way. Probably not since when I was in school. Pudding is so boring, you can actually swish it around your mouth if only to amuse yourself. But a Chocolate Coffee Mousse... mmmmm... a twist. A combination of a few of my favorite things *I have many*: Coffee! Cream Cheese! Chocolate! Mmmmmm.... Vanilla can always be topped off with chocolate... or caramel... strawberry... banana... or yada yada yada. It is its simplicity that makes it so interesting. So the truth is... There's excitement in everything, no matter how boring it may seem.




Chocolate Coffee Mousse

1/3 Cup Espresso (or really strong brewed coffee)
450g Cream Cheese
230g Ricotta Cheese
1 Cup Caster Sugar
500g Chocolate Sponge Cake
Cocoa Powder for sprinkling

In a bowl, combine the coffee and cake. The cake should be moist with the coffee, but not soaking.

In a separate bowl, beat the cream cheese, ricotta cheese and sugar until light and creamy.

Taking a ramekin cup, or a big glass bowl, or dish, spoon in a layer of the chocolate cake-coffee mix. Top it with a spoonful of the cheese mixture. Then another layer of the cake. Continue up to 4 layers, and sprinkle the top layer with cocoa powder.

Chill overnight before serving.
