Tender Coconut Pudding( without egg)

This is a very simple and easy to make tender coconut pudding. I first tried this 10 years ago using just my imagination and limited knowledge and it came out very well. When I was a kid, a relative of mine used to make this delicacy during Eid. We would visit her on our way back home from our grand mother's house. I had asked for the recipe but she had never given the exact measurements. Every Eid I would wait to eat this pudding. It is very tasty, do give it a try you will definitely fall in love with it, with the added advantage of getting it ready in minutes.

My previous student, had requested for any easy pudding recipe. Here you go Samitha!

Ingredients:

Tender Coconut- 1
Milk- 2.5 cups
Sugar- 1/2 cup or more according to taste
Condensed milk- 1/2 tin(optional) reduce sugar if using condensed milk.
Gelatin- 3 tbps (replace with china grass if you don't have gelatine)
Water- 1/2 cup
Method:

Take a pan and add the 1/2 cup of water. Sprinkle the gelatine over this water and allow to soak for two minutes.
When the gelatine is soaked, keep the pan in flame and allow the gelatine to melt. Kindly take note that we do not want the gelatine to boil. Keep it aside.
Cut open the tender coconut and keep the juice aside.
Scoop out the harder flesh and add it into a blender. Add 3 tablespoons of sugar and half a cup of the coconut juice and grind to a smooth paste.
Add in the milk and the grinded paste of the coconut into the gelatine mixture. I do not boil the milk as I use UHT milk.
Add in condensed milk according to taste.
If using milk in India kindly boil and allow to cool completely before mixing the coconut paste and gelatine.
Amul Taza is available in supermarkets nowadays. I prefer this in India to make this pudding.
Pour this mixture into the container in which you are going to freeze and scoop out the tender part of the coconut and mix it into the pudding mixture. It will float on top.
Keep in fridge and allow to set for atleast two hours before serving.
