Tender Pork Belly in Soy Sauce

This recipe was inspired by a cooking show I was watching the other day. I've simplified the recipe and tried using fewer ingredients. However the final result was no less than the recipe on the show. The preparation is extremely easy and the outcome is delicious.











Ingredients:

500-600g pork belly
A good amount (maybe 8-10 tablespoon) light soy sauce
1 tablespoon Hoisin sauce
2 bay leaves
1 small onion, chopped
3-4 star anise
2 cloves garlic
1 tablespoon sugar
1 and 1/2 cup water or enough to cover the meat
Preparation:

Cut pork belly into pieces.
In a heavy-bottom pot, mix all the ingredients. Cover the pot and start cooking in a medium heat for about an hour until the sauce is thicken and the pork is tender.
Serve with rice.
