Texas Caesar Salad
![]() I was introduced to this recipe by my friend Collette during law school. Every time I eat it, I am taken back to a pot luck with some wonderful friends and colleagues. It is a great, bright, verdant (as Rachel Ray would say) salad! Salad: Romaine Tomatoes Anything else you have on had Dressing: 2/3 c. chopped cilantro 1/4 c. plain yogurt 1/4 c. red wine vinegar 1/4 c. grated Parmesan 1/4 c. chopped shallots 2 anchovy fillets 2 garlic cloves 1 jalapeno, chopped (and seeded depending on the amount of heat you want) 1 T. lemon juice Place all dressing ingredients in a blender, puree until smooth. Toss with salad ingredients. **Update** Yesterday my wonderful mother sent me home with taco salad for dinner so that I could relax and didn't have to cook. Normally I toss the ingredients with salsa, but this time I used this dressing and it was wonderful!! Have you entered my giveaway here?
