Thai Style Vegan "Scallop" Dish

Ack! Apparently I am not very good at keeping my resolutions :( Moving on from my failures and starting fresh this week, here is some delicious food I've made the past few days! And some pics of what I woke up to on Saturday morning!

I've been seeing lots of people using King Oyster mushrooms, for a Vegan "Scallop" I decided to give it a shot, when I finally found some at a local grocery store. I sliced them in about a 2/3 - 3/4" thickness, and the soaked them in a Sea-weedy broth, I marinated the "scallops" in the brine/broth over night. I made a simple Thai Chili-peanut sauce sauce and tossed in some julienned veggies with some Vietnamese style Noodles. I dryed off the "Scallops" then seared them in sesame oil. I thought it was pretty good, didn't taste "ocean-y" like I have heard scallops taste like. But the texture seemed to be similar to what I've heard them described as and they certainly look a lot like scallops, it is hard for me to try re-creating something I have tried. lol. I never ate scallops when I was still an Omnivore.


I made this Lasagna a few months ago, and froze it unbaked. I pulled it out the morning of a day that I knew I would be home late. It was really yummy, I used a store bought sauce that I wasn't very good, but the cheesey-ness on the top, ground homemade Italian sausages, and cultured cashew ricotta filling, more then made up for the not great sauce.


I love this type of snow, soft, fluffy and not too cold outside. Unlike today, it was -35 degrees Celsius with the wind chill, the temp here was colder then most Northern parts of Canada! At times like this I don't feel particularly proud to be a Canadian, I love the pretty white snow, but hate the bone-chilling cold.

My cat Delilah deciding to investigate what this white fluffy stuff was. She didn't seem to hate or like it, took awhile to sink that she was cold.
