Thanksgiving Leftovers Recipe Contest

Using thanksgiving dinner leftovers come up with an original recipe, the winner will receive $10,000. This is why I haven't posted anything the last couple days. Measurements, tastes, colors, and photographs had to be perfect. How do you produce Thanksgiving dinner leftovers without cooking a full Thanksgiving dinner? Exactly, you can't. I roasted a 12 lb. turkey, fresh cranberry sauce, mashed potatoes, roasted sweet potatoes, grilled corn on the cob, and gravy. I'll admit it felt weird having Thanksgiving dinner on a very insignificant September night. Result, i overcooked the turkey. I was sooooo pissed, all that hard work. You can't really eyeball the internal temperature of a 12 lb turkey, i will never not use a meat thermometer again. The sides on the other hand were delicious. None the less I think I produced some real authentic thanksgiving leftovers (overcooked turkey included, i'd say about 50% of people overcook their turkeys on Thanksgiving whether they now it or not).
The most awesome part about my leftover recipe is that is doesn't really matter that your turkey is overcooked and dry, any kind of turkey will work. I?ve been on a major Southern food kick. Braised green kale, sweet potato rolls, barbecue beef ribs, cheddar jalapeno cornbread, I am obsessed. In line with my current food obsession, I transformed the turkey into barbecue pulled turkey and made it a sandwich. The barbecue pulled turkey is a dark/white meat mix and a smoked turkey wing slow simmered in a cranberry spiked barbecue sauce. Barbecue without smoke is like a hotdog without mustard, it?s a must. The smoked turkey wing does the job, adding a smooth smoke flavor. Anytime you put eggs salad, sloppy Joe, or in this case pulled turkey, on a crusty roll it gets squeezed out the back of the sandwich after the first bite. Soft roll is imperative. My sweet potato bread rolls are perfect. Not only are they soft, southern, and a little sweet but I'm also using the leftover roasted sweet potatoes. The only difference from my previous recipe is the size, about double. The perfect condiment for any barbecue sandwich is coleslaw and cheese. Leftover grilled corn, purple cabbage, carrots, and cranberry sauce made for the coleslaw and extra sharp cheddar the cheese. Sweet, smoky, savory, tangy, crispy, smooth, gooey, purple, red, yellow, and orange, this sandwich is an absolute masterpiece of flavor, texture, and color.

Barbecue Pulled Turkey:

4 cups leftover roast turkey
1 smoked turkey wing (smoked ham hock is a suitable replacement)
1 cup roast turkey pan juices
½ large onion
3 cloves garlic
½ cup cranberry sauce
3 tbsp tomato paste
1 cup canned tomato sauce
½ cup apple cider vinegar
1 tbsp Worchester sauce
3 tbsp Dijon mustard
1 tsp cinnamon
2 tbsp paprika
1 tsp cayenne pepper
¼ cup dark brown sugar
1 tbsp kosher salt
1 tbsp canola oil
Using a stick or food processor puree onions and garlic. In a medium sized pot brown puree in the canola oil on medium high heat. Add tomato paste, cayenne pepper, paprika, and cinnamon. Once the ingredients begin to stick to the bottom of the pot add vinegar, turkey pan juices, tomato sauce, smoked turkey wing, Worchester sauce, mustard, cranberry sauce, brown sugar, tbsp salt, and turkey. Stir well making sure you scrape up the bits that have stuck to the bottom of the pot. Once the mixture has come up to a boil reduce heat to a simmer. Cook until turkey meat begins to fall apart and sauce thickens about 1 ½ to 2 hours.

The cranberry in the barbecue sauce really adds an interesting dry tart flavor. Really delicious.

Sweet Potato Rolls:

2 quarter ounce packets of active dry yeast
½ cup warm water
¼ cup sugar
1 tbsp sugar
1 tbsp salt
3 eggs
3 cups flour
½ cup pureed leftover sweet potatoes

Combine yeast, 1 tbsp sugar, and warm water in a bowl and let set for 5-10 minutes. Add remaining sugar, butter, salt, and 2 eggs to the yeast bowl and stir well. Stir in flour a bit at a time, and then add the sweet potato. Turn out onto a floured surface and knead until dough is smooth and springy, shape it into a ball. Place in an oiled bowl, and coat the dough completely with oil. Cover bowl with towel or plastic wrap and let sit in a warm place until it doubles in size, about 1 hour. Punch down the dough and shape into 5-6 balls. Place them on a buttered cookie sheet about 3 inches apart. Cover and let rise until doubled in size. Preheat oven to 350 degrees F. Brush rolls with beaten egg. Bake for 20-25 minutes or until golden brown.

Grilled Corn and Cranberry Coleslaw:

1 tsp kosher salt
3 tbsp sugar
¼ red onion fine chop
¼ cup mayonaise
¼ cup apple cider vinegar
4 medium sized carrots shredded
½ head purple cabbage shredded
3 tbsp cranberry sauce
½ tbsp mustard
Combine all ingredients in a large bowl and toss well.
The color on this is ridiculous. PURPLE! I love purple cabbage, what other vegetable is purple?It's crisp, sweet, and has a great zing. Perfect condiment for the sandwich.

Barbecue Pulled Turkey Sandwich Recipe:
(Serves 5-6 very hungry people)

5-6 cups barbecue pulled turkey (recipe follows)
5-6 sweet potato rolls (recipe follows)
5-6 cups cranberry coleslaw (recipe follows)
5-6 slices of extra sharp cheddar cheese

Slice rolls horizontally and top bottom half with 2-3 heaping spoonfuls of pulled turkey. Add slice of cheese and melt under a broiler. Add 2-3 spoonfuls of coleslaw and top with upper roll half.
