The art of Italian cooking: pasta salad with tomatoes and chickpeas
Hi, this is the fifty seventh post about the art of cooking Italian pasta. Everyone will love it. This pasta salad is made according to the Mediterranean diet that suggests to combine pasta, especially wholemeal pasta, with pulses for eating healthy. One of its ingredients is tomato. How do you peel tomatoes? Everyone knows there are two techniques to peel them. Somebody plunges them in boiling water for a minute, immediately after in very cold water or water with ice. All that to peel them easily. It isn’t the right way according to our opinion. In fact you may lose important nutritional properties and their flesh becomes watery and too soft. Carlo and I prefer to peel them raw. Besides it’s quicker. Eventually you can press the tomato pieces lightly with a fork directly in the bowl. Well.
