The jetlag cure

By the particular kitchen (Visit website)

i promise that today’s post will make a LOT more sense than yesterday’s! plus, it’s got an actual recipe in it. that is already an upgrade :)

to keep ourselves awake yesterday, we went for a nice long walk to the supermarket and stocked up on a few random goodies for dinner. i decided that we needed soup and created a pretty delicious and healthy one after checking out a couple of similar recipes. and after a big bowl of this and a good night’s sleep, i think i may have discovered the jetlag cure.

the key is in the ingredients and spice. it’s a fairly bland broth, but some nice fresh veggies make it truly special.

kale and white bean soup (aka ‘the jetlag cure’)

i didn’t make any measurements really…. just throw stuff in a pot and hope for the best.

apologies for the grainy photo!

the particulars:

1/2 large onion, chopped
3 cloves garlic, finely chopped
2 carrots, chopped
4 celery stalks, chopped
1 red chili, deseeded and finely chopped
1 can cannelini (or other white) beans, drained
1/2 bag of kale, chopped
boiling water
salt and pepper
red chili flakes (optional)

heat some olive oil in a large saucepan and cook up the onions, carrot, and celery. once the onion is transparent, add the garlic and chili. cook for a few minutes, then add the beans and kale.
add as much boiling water as you think you will need. this soup is kinda nice with slightly less water than you’d expect, so you can see the beans and kale poking out of the top.
season with salt and pepper, and add a dash of red chili flakes if not spicy enough.

lesson learned: veggies + fiber + spicy + broth = I FEEL SO MUCH BETTER TODAY!
