The Kids Cook Monday: Loaded Crustless Dinner Pie
![]() The Kids Cook Monday is a weekly opportunity for families to take health into their own hands. The Kids Cook Monday provides examples of kid friendly recipes and video demonstrations along with nutrition and safety tips ? making it easy for families to cook and eat together every Monday. This recipe goes together quite fast. Ash took care of the eggs, carrots, bread and cheese steps, leaving us free to chop, saute and layer the hot stuff. All in all it was together in about 15 minutes. It does take 45 to bake. We felt this recipe was still viable weeknight fare because the cooking happened in the background. We had the kitchen cleaned up and plenty of time to go through homework, mail and empty lunch boxes while it cooked. 1 lb ground turkey 1 medium onion, diced 1 large carrot, grated 1 handful of chopped spinach 1 can of diced potatoes, drained 8 eggs 1 1/4 cup milk 6 pieces of whole wheat bread 2 cups shredded cheddar cheese salt & pepper to taste Prepare all of the fresh veggies by chopping and grating so they cook quickly. Brown the turkey about half way then add the onion, carrot and spinach. When the turkey is cooked drain if necessary. Add the canned potatoes and heat through. Combine the eggs and milk, mix well. Prepare a 9 X 13 pan with non-stick cooking spray. Tear the bread into pieces. Layer the bread and half of the cheese in the pan. Add the meat mixture. Pour in the egg mixture, top with the second half of the cheese, steal some to pop in your mouth, then bake at 350 degrees for 45 minutes. Ash really hates all of this cooking stuff, as you can see it makes her miserable! Although similar to a frittata, a larger amount of milk makes it less dense and creates a dish that does not showcase the egg so much as all of the ingredients it is holding together. Tips & Comments This is one of those fabulous recipes that changes with the groceries you have on hand. Vegetarian: Substitute about 2 cups of veggies for the meat Veggie subs are endless, switch out any or all: BroccoliAsparagusMushroomsZucchiniIf you use frozen veggies, warm in the microwave before sauting to make sure they get tender. No bread? No problem, try one of these instead: 1 cup of stuffing mix1 cup of croutons1 1/2 cups of panko breadcrumbsAbout 3 shredded up pita pockets Have leftovers? Crumble on a plate and microwave on high until warm. Wrap into a warm tortilla with some salsa. Mmmmm....
