The Latest Eats.
Sorry for the lack of updates everyone! I have excuses, none exciting...just life being busy, sick with a cold, bloodwork, locking ourselves out of the house (UGH!), not being able to access my blog...the list goes on. I also apologize for my lack of commenting for a while! I've desperately been trying to keep up with comments, but (again because of the above reasons) I got a little behind for a while. I'm slowly getting there though!
But there has been cooking. Some new, some old, but most were rather tasty so I'll go ahead and share anyway :) First up Vegan Brunch East Coast Coffee Cake. If you haven't made this yet...what are you waiting for?!?!?! I went with adding in frozen raspberries, which didn't actually work that well...it made it kind of like East Coast Blondie in some places but that's okay. I still could have eaten the entire cake myself. I've been desperately trying NOT to make this again because I just know that next time I will gobble it all up!I made Buckwheat Waffles with Red Wine Mushroom Tarragon Gravy also from Vegan Brunch one night. I had a little trouble with the batter being too runny, but when I added more flour it turned to a glue type consistency and while my waffles were wonderfully crispy on the outside, they remained glue in the middle :( The gravy however was to die for and even Mr UnVeg said it was the best gravy ever (well one of them...he really likes good gravy!) After seeing them on Sals blog, I really had a craving for BBQ Ribs the other night. They came out superbly as they most normally do (I've had troubles once or twice in the past...I think it was my smoked paprika). These are definitely the best ribs ever! I made Warm Burgul Salad with Herbed Baked Ricotta from a little free recipe book I found, which if you are an Australian, you can order for yourself here. It has a couple of fantastic recipes. All are vegetarian, but not all vegan. Most I imagine can be veganized though. From that same little recipe book I made Lentil Sausage Rolls. These were great and phyllo pastry made a nice change from puff, although I plan to make them again with puff. They did use an egg which I subbed with Orgran No Egg and it worked just fine.![]() Last but not least I made Chocolate Mug Cake from Green Gourmet Giraffe. I subbed Orgran No Egg for the egg and it worked perfectly in this too. I considered using flax egg for the fibre but was worried I'd be able to taste it. This mug cake was violently wonderful and as I said to Johanna, I'm not sure if I love her or hate her for posting that recipe (:P) because it's going to be a nightly battle to restrain myself from making it every........single........night! Yes, it's that good! Even Mr UnVeg said it rivalled oven baked chocolate pudding and couldn't believe I'd whipped it up in 3 minutes total and cooked it in the microwave! If you haven't made this yet...why the heck not? Run...run like the wind to your microwaves! (I know it's a crummy photo, but it was dark, late and it smelled SO good!))
