The Peppa Pig Palava!!
So! For my daughters 3rd birthday i decided that i wanted to make her birthday cake, and with my big aspirations i thought it would be a brilliant idea to turn it into a Peppa Pig cake. Lol. Well, i thought it would be easy....(and it was really), but getting there was an ordeal! Since when do corner shops run out of eggs and butter!? Anyway, after numerous "shop runs" (caster sugar,butter,eggs), one cake disaster (not enough cake batter) and a few smashed eggs (bday girl herself trying to "help")....i finally got there! And this is what it looked like! I say looked because its already been half eaten :P Sorry for not having taken more pics during the process but i was so concerned with it turning out right. For the sponge i used two 22 inch round tins, and instead of of a sponge cake i used a basic butter cake. Which , i have to say turned out really tasty!! For in between the cake i used a lemon butter cream. Butter cake 250g Butter, softened 1teaspoon vanilla extract 1 1/4cups(250g)caster sugar 3eggs 2 1/4cups(335g)self-raising flour 3/4cup(180ml)milk Preheat oven to 180C/160C fan. Grease deep 22cm round cake pan; line with baking paper.(I didn't but i used a greased springform pan)Beat butter, extract and sugar in medium bowl with electric mixer until light and fluffy. Beat in eggs , one at a time. Stir in sifted flour and millk, in two batches.Spread mixture into pan; bake about 1 hour. Stand cake 5mins; turn, top-side up , onto wire rack to cool.When the cakes were cooled and ready to be decorated i noticed that they both had raised higher in the centre so on the bottom cake i gently sliced across at the over risen part so it was even. I then did a simple lemon buttercream. 1oog Icing sugar 50g unsalted butter Zest and juice of half a lemon Beat all ingredients together well and spread on bottom layer. For the rest of the decorations i just bought ready coloured icing from a cake supply shop and just rolled it out how i wanted it! Took a while and some steady hands but it was worth it! When it was brought out at the restaurant some of the staff were told to come over and have a look and they were really impressed! Made my day... !
