Threadfin with Wood Ears
250gm threadfin, sliced3/4 cup softened wood ears3 slices ginger3 cloves garlic, minced1/2 tbsp light soya sauce1/2 tbsp sesame oil2 tbsp chinese winepinch of salt1/4 tsp white pepper1 stalk spring onion1 tbsp cornstarch water Method Marinate fish with seasoning.Heat 2 tbsp oil in wok. Add ginger & garlic, fry till fragrant.Add fish, stir-fry on high heat for 2 mins. Add wood ear & 2 tbsp water. Stir to mix. Add cornstarch water & spring onion. Mix evenly. Serve.
