Toffee Cup Cakes

I found a packet of toffee when I went to Mustafa last time. I immediately picked them up because I had the idea of making a butterscotch cakes from a long time. But we do not get butterscotch chips here. So I though may be make toffee cake instead. Since this cake was just a trial I made just few cupcakes, but regret now that could have made more...They where very yummy.

Ingredients:(makes 8-10 cupcakes)

Egg- 2
Flour- 1 ¾ cup
Brown Sugar- 1 cup
Baking Powder- 1 ½ tsp
Butter- 150 grams
Toffee- ½ cup crumbled
Vanilla essence- 1 tsp
Milk- ¼ cup
Salt- a pinch
Method:


Beat butter and sugar until light and fluffy.
Add in eggs and beat until its incorporated.
Sieve flour,baking powder and salt into the butter mixture and gently fold in.
Add in vanilla, toffee pieces and milk to get the correct batter consistency.
Scoop into paper cups and bake in preheated oven at degree C for 25- 30 minutes.






It came up to my expectations.So another success story for me. I just microwaved it for 10 seconds after the second day to have with a cup of tea. It was truly delicious...
See the toffee bits in it....It was the most yummiest part.
