Tomato Mung Bean Salad

A light little Thai salad adapted from The 30-Minute Vegan's Taste of the East: 150 Asian-Inspired Recipes--from Soba Noodles to Summer Rolls...



Difficulty Level: Easy





What you need:

1 large tomato, chopped
2 cloves garlic, minced
1 cup mung bean sprouts
1/2 jalapeno pepper, seeded and chopped
1/8 cup green onions, chopped
1 tsp. fresh mint, chopped
1 tbsp. fresh cilantro, chopped
1 tsp. soy sauce
2 tsp. sesame oil
1 tsp. rice wine vinegar
1/2 tsp. Sriracha
sea salt, black pepper, to taste
handful peanuts for garnish (optional)
What to do:
Combine all ingredients in a large bowl and toss to combine. Garnish with peanuts.  Serves: 2  Bon Appetit!
