Torta od ?okolade i naran?e / Chocolate Orange Layer Cake

Prije nekoliko dana obilje?ili smo dva zna?ajna datuma - mamin ro?endan i prvu obljetnicu bloga kojeg upravo ?itate :) Njima u ?ast nastala je ova bogata torta sa uvijek omiljenom kombinacijom ?okolade i naran?e. Torta je izda?na ali ne i preslatka, a ?ak nije ni jako te?ka jer ?e?era i maslaca sadr?i u minimalnim koli?inama. Bez daljnjih pri?a i pri?ica te nepotrebnog duljenja, slijedi recept :)


Torta od ?okolade i naran?e

Biskvit
za okrugli kalup promjera 24cm

130g maslaca
200g ?e?era
korica jedne naran?e
3 jaja
130 ml mlijeka
50g gorkog kakaa
160g o?trog bra?na
?li?ica sode bikarbone
?li?ica pra?ka za pecivo

Za natapanje biskvita
100ml svje?e iscije?enog naran?inog soka
?lica ruma

Pe?nicu zagrijte na 180°C. Okrugli kalup za tortu promjera 24cm namastite i oblo?ite papirom za pe?enje.

Maslac i ?e?er pjenasto umutite. Dodajte naran?inu koricu te jedno po jedno jaje uz neprestano miksanje. U posebnoj posudi pomije?ajte bra?no, kakao, sodu i pra?ak za pecivo pa tu smjesu naizmjence sa mlijekom postepeno umije?ajte u smjesu maslaca i jaja. Smjesu izlijte u pripremljni kalup, poravnajte povr?inu i pecite 30-35 minuta, ovisno o ja?ini pe?nice. Je li biskvit pe?en provjerite ?a?kalicom.

Pe?eni biskvit izvadite iz kalupa, odstranite papir za pe?enje i ostavite ga da se ohladi. Potom ga prere?ite na dva jednaka dijela.


Krema od naran?e (Orange curd)*

2 ?umanjka
75g ?e?era
120ml svje?e iscije?enog naran?inog soka
korica 2 naran?e
korica 1 limuna
30ml svje?e iscije?enog limunovog soka
?li?ica ?elatine u prahu
80g hladnog maslaca
200ml slatkog vrhnja

U ve?oj posudi pomije?ajte jaja, ?umanjke i ?e?er. Posudu stavite na paru i kuhajte uz stalno mije?anje pjenja?om (ili jo? bolje elektri?nim mikserom) dok se ne zapjeni, 1-2 minute. Potom dodajte naran?in sok, koricu limuna i naran?e i kuhajte i dalje miksaju?i dok se ne po?ne zgu?njavati. ?elatinu prelijte limunovim sokom i ostavite par minuta da nabubri, a potom ju dodajte u posudu s kremom. Kuhajte dok se ?elatina ne otopi, a potom maknite s vatre i umije?ajte maslac narezan na kockice. Dobro izradite pjenja?om kako bi se maslac otopio. Ako vam smetaju sitni komadi?i naran?ino korice u kremi, procijedite ju kroz cjedilo. Kremu pokrijte plasti?nom folijom tako da folija doti?e povr?inu kreme. Tako ?emo sprije?iti formiranje korice. Orange curd odlo?ite u hladnjak preko no?i. Ne brinite ako jekrema prerijetka. Ona ?e se jako dobro stisnuti u hladnjaku ali ju obavezno morate napraviti dan prije sastavljanja torte. Netom prije sastavljanja torte u orange curd umije?ajte tu?eno slatko vrhnje.

Krema od ?okolade i naran?e*
200g tamne ?okolade s aromom naran?e (70% kakaa)
2 jaja
2 ?umanjka
100g ?e?era
1 vanilin ?e?er
korica 2 naran?e
100ml svje?e iscije?enog naran?inog soka
2 listi?a ?elatine
2 ?lice likera od naran?e
150ml slatkog vrhnja


?okoladu razlomite i otopite na pari. U posebnoj posudi pomije?ajte jaja, ?umanjke, ?e?er i vanilin ?e?er te pjenasto izradite. Dodajte naran?inu koricu te stavite na paru i kuhajte uz stalno mije?anje dok se ne zapjeni. Potom dodajte otopljenu ?okoladu i kuhajte nekoliko minuta uz stalno mije?anje.

U me?uvremenu ?elatinu prelijte sa hladnom vodom. Kad nabubri dobro je ocijedite, prelijte naran?inim sokom i zagrijavajte na laganoj vatri dok se ne otopi. Otopljenu ?elatinu dodajte u smjesu jaja, ?e?era i ?okolade. Dodajte zatim i liker od naran?e i sve zajedno kuhajte jo? 2-3 minute. Kremu potom procijedite kroz cjedilo (ako vam smetaju sitni komadi?i naran?ine korice) i dobro ohladite uz ?esto mije?anje. U sasvim hladnu kremu umije?ajte tu?eno slatko vrhnje.

*Ovu kremu tako?er mo?ete napraviti dan ranije. Jo? toplu kremu prekrijte plasti?nom folijom tako da folija doti?e povr?inu kreme i stavite u hladnjak preko no?i. Sat vremena prije sastavljanja torte kremu izvadite iz hladnjaka da malo omek?a i izradite ju elektri?nim mikserom. Potom u nju umije?ajte tu?eno slatko vrhnje.

Sastavljanje
Donju polovicu biskvita polo?ite na pladanj i okru?ite ga prstenom. Biskvit prelijte sa malo naran?inog soka i ruma pa na njega rasporedite ?okoladnu kremu. Zagladite povr?inu i poklopite drugom polovicom biskvita koju ste tako?er prethodno natopili smjesom naran?inog soka i ruma. Tortu na kratko stavite u hladnjak, a potom odstranite prsten i cijelu tortu prema?ite kremom od naran?e. Ukrasite ?okoladnim mrvicama i dobro ohladite prije poslu?ivanja.


Chocolate Orange Layer Cake

Cake
for a 24cm springform cake tin

130g butter,on room temperature
200g granulated sugar
zest of one orange, finely grated
3 eggs
130ml milk
50g powdered cocoa
160g cake flour
1 tsp. bicarbonate of soda
1 tsp. baking powder

For moistening the cake
100ml orange juice, freshly squeezed
1 tbsp. of rum

Preheat the oven to 180°C. Line a 24cm springform cake tin with parchment paper.

Beat the butter and sugar until light and fluffy. Add the orange zest and eggs, one at the time, while whisking continuously. In a separate bowl mix together cocoa, flour, bicarbonate of soda and baking powder. Mix it into the egg mixture gradually. Add the milk and stir well. Pour the mixture into a cake tin and bake for 30-35 minutes. Check with a wooden skewer.

Take the cake out of the cake tin, remove parchment paper and allow to cool. Then cut it in half horizontally.

Orange Curd Filling*
2 eggs
2 egg yolks
75g granulated sugar
120ml orange juice, freshly squeezed
zest of 2 oranges, finely grated
zest of one lemon, finely grated
30ml lemon juice, freshly squeezed
1 tsp. powdered gelatin
80g butter, diced
200ml heavy whipping cream

In a large bowl mix together eggs, egg yolks and sugar. Put the bowl on a double boiler and cook whisking continuously until light and frothy, 1-2 minutes. Then add orange juice, lemon and orange zest and continue to whisk until it starts to thicken. Pour the lemon juice over gelatin and let it soak for a few minutes. Then put it into the curd and cook until it dissolves. Remove from heat and stir in the butter. Mix well until the butter melts and incorporates into the curd. If necessary, strain the orange curd through a sieve to remove small pieces of orange zest. Transfer to a bowl and put a piece of plastic wrap directly on the surface to prevent a skin from forming. Refrigerate over night! The next day, right before you assemble the cake, fold in the whipped cream.

*Orange curd must be prepared one day ahead because it takes a bit longer for it to thicken. But it will thicken nicely once it is properly chilled, even if it doesn't look promising, trust me :) Right before assembling the cake, fold the whipped cream into the curd and your filling is ready.

Orange Flavored Chocolate Filling*
200g orange flavored dark chocolate (70% cocoa parts)
2 eggs
2 egg yolks
100g granulated sugar
1 bag of vanilla flavored sugar (10g)
zest of 2 oranges, finely grated
100ml orange juice, freshly squeezed
2 sheets of gelatin
2 tbsp. orange liqueur
150ml heavy whipping cream

Break the chocolate into chunks and melt on a double boiler. Set aside. In a separate bowl whisk together eggs, egg yolks, sugar and vanilla sugar. Add orange zest and put on a double boiler. Cook whisking constantly until light and frothy. Then add the melted chocolate and continue to cook for another 3-4 minutes.

In the meantime, pour some cold water over the gelatin sheets. Once the gelatin swells, pour orange juice over it and melt on a low heat. Then pour it into the chocolate mixture. Add the orange liqueur and cook for another 2 minutes. Remove from heat and strain through a sieve if necessary. Allow the filling to chill completely and then fold in the whipped cream.

*You can also prepare this filling one day ahead. While it's still warm, put a piece of plastic wrap directly on the surface of the chocolate filling to prevent a skin from forming. Refrigerate over night. The next day, an hour before assembling the cake, take it out of the refrigerator and allow to soften a bit. If necessary, beat it lightly with and electric mixer to soften it even more. Then fold in the whipped cream and your filling is ready.

Assembly
Place one half of the cake onto a serving tray and surround it with a cake ring. Moisten it with a few tablespoons of orange juice and rum mixture and then spread the chocolate filling over it. Moisten the other half of the cake and carefully place it on top of the chocolate layer. Refrigerate briefly. Remove the cake ring and cover the whole cake with the orange curd filling. Decorate the with chocolate shavings and chill before serving.
