Two Reasons To Eat Chocolate Before Noon

Good morning, and happy Martin Luther King’s Day!

Grilled chocolate sandwiches.

Recipe inspired by Marlene Parrish’s Grilled Chocolate Sandwiches from the book: What Einstein Told His Cook 2.

Grilled chocolate sandwiches is a play on Pain au Chocolat and Grilled Cheese. It’s really a delicious recipe and as soon as I read about it I had to try it.

The original recipe called for French or sourdough bread which would be nice, but I had this crusty loaf from the Farmer’s Market on Saturday. IMG_0233

It’s whole what honey and I absolutely adore this bread. I bought it last week and almost cried when I was out. ;-) The chocolate I used was 100% dark Ghirardelli. I really enjoy the bitter flavor of dark chocolate but if you preferred you could use 60%, or even milk. 1-2 oz is the perfect amount, as it melts and makes each bite gooey.

Before cooking I actually dipped the slices in almond milk. They were a little stale already, and the almond milk bath perked them right up. When they were grilled, the inner dough was soft and warm and the outside had almost a French toast/grilled cheese texture.

I used a non-stick skillet and sprayed it with cooking spray (the ‘balance wasn’t spreading very well on my soggy dough!) Once both sides are grilled and have that "crust" grilled cheese sandwiches have, top one slice with chopped chocolate. I spread amber honey on the other slice to add a really complex sweetness to the bitter 100% chocolate.     IMG_0236

Grill to desired done-ness and enjoy!

Honey Whole Wheat Grilled Chocolate Sandwiches

2 slices stale honey whole grain bread (or another whole grain bread)
2 tbsp almond milk
1-2 oz 60-100% dark chocolate
1 tsp honey
Olive oil mist (or cooking spray)

Slice the loaf of bread into slices of your desired thickness. Dip each slice in the almond milk bath, but don’t let them get soggy.

Spay a non-stick skillet with olive oil and cook the bread on both sides. Top one slice with chopped chocolate and one half with honey. Sandwich together, then proceed to grill until desired done-ness.

Mmmm this breakfast was so good!

If you’re not in a breakfast sandwich mood, maybe a bowl of oats will suffice?

Chocolate mudslide oats? Genius Katie? Genius. :-)

(Click on the chocolate mudslide to view her recipe.) I sprinkle the top with instant coffee crystals and top it with an Amazing Grass Chocolate-almond milk slurry. So, so delicious!

I have to finish my English final today and then get my butt to a pool!

Have a great day :-D
