Urulai Varuval /Potato fry 3
Ingredients :
Baby potatoes /small potatoes -- 1/3 kilo Red chillies -- 4 nos. Urad dal -- 2 tbsp Curry leaves-- 1sprig Channa dal -- 1 tbsp Oil -- as reqd Salt -- to taste Coriander leaves -- 2 tbsp shallots -- 10 (chopped) Mustard seeds -- 1/2 tsp Method : Boil the baby potatoes to 90 % and peel the skin. If u don't get baby potatoes in ur locality try getting smaller /mini potatoes ,I did the same ... :) In a small pan dry roast the red chillies, urad dal ,channa dal and the curry leaves. Grind this to a powder ( not so fine) . Take a wide pan, preferably, a kadai and do the seasoning with the mustard seeds and shallow fry the shallots until try turn translucent..( reduce the no. of shallots to 5 if it is bigger ) . Now add the boiled potatoes and scald well in the oil for 2 minutes in low heat. Finally sprinkle the ground powder as needed and combine well. Add enough salt. Keep this mixture cooking in low flame until they are all nice brown and tempting !! it might take 10 to 12 minutes.. Enjoy with plain rice,sambar rice and even rasam.. Happy eating !!!
