Vangibath

Vangibath - Eggplant rice

This rice tastes yummy and everyone loves this rice.
Ingredients:
Eggplant/Brinjal- 1big cut into small squares or 4 to 5 small each cut into 4 halves
peanuts- 2 tbsp
onion- 1 medium
curry leaves - 2 strips
coconut - shredded 4-5 tbsp
tamarind extract - 1 tsp
cumin seeds -1 tbsp
vangibath masala (or) idlipowder - 3 tbsp  + garam masala - 1 tsp
rice - 2 cup
salt
oil

Vangibath masala consists of frying the below ingredients and powdering it.
Urad dhal -1 tbsp
Channa dhal - 1 tbsp
Moon dhal - 1tbsp
coriander seeds- 1/2 tbsp
cumin seeds- 1/2 tbsp
chillies - 6-7 nos
and then garam masala
cinnamon stick- 2
cloves - 4-5
start anise - 2 nos
brinji leaves- 1 nos


Every tamilian shall have idli powder at home so if you dont have vangibath masala you can add idlipowder and garam masala together.


Method :


In a deep bottom crockpot pour 2 tbsp of oil and add cut eggplant of uniform shape and fry it till it becomes tender. Take it out and keep it separate.And then fry the chopped onions till it becomes transparent. Add it to  fried brinjal. Now start with oil, peanuts,curry leaves ,cumin and then add the vangibath powder or idlipowder+garam masala and then once you smell nice aroma add grated coconut and mix it well. Now add brinjal , onion and tamarind juice and rice and add water in ratio 2:3.
Close the lid and let the rice cook well. When it is done add 2 tbsp of oil and take it down.

Serve with coconut chutney or raita or ricewafers and fried dry chillies .
