Vanilla Custard Slice With Passion Fruit Icing is a very delicious slice, beautiful as a dessert. I have always wanted to make this slice ever since the first time I saw it in The Australian Women’s Weekly cookbook long time ago because I love custard.


Then recently another wonderful food blogger, Conor, posted it on her lovely blog, Hold The Beef. When I read that her mom must have made it over 100 times, I told myself I just have to make it as soon as possible!


I made it on a Saturday morning recently for my family and also to share with a friend. My family liked it very much and so did my friend. In the afternoon another 2 friends dropped and they liked it very much too. That proves that this is really a very delicious slice. I’m sure I will be making it very often and I hope you give it a try too.


However, I do find that the puff pastry layers (top and bottom) of the slice were a little chewy. I would prefer it to be a little crunchy so that it’s easy to cut through with a spoon. May be someone can enlighten me on that.


The recipe is actually very simple and easy. I made a little adjustment to the recipe though, usually in the sugar.


Ingredients A

2 sheets ready rolled puff pastry

Lay the 2 pieces of puff pastry on a baking tray and bake for about 10-15 minutes at 200 degrees Celsius. It will puff up like in the picture above. Remove from the oven and using a clean tea towel, press it to flatten. Be careful of the hot steam.


Line a tin (I used a cake tin) with baking paper. The best is if you can have a tin the size of the pastry otherwise you can just trim to fit. Lay one piece of the pastry at the bottom of the tin. The other one is for the top later.


Ingredients B (custard)

3/4 C sugar

1/2 C corn flour

1/2 C custard powder

1 litre milk

60 g butter

2 egg yolks

2 tsp vanilla extract


Ingredients C (passion fruit icing)

1C icing sugar

1t butter

pulp of 1 passion fruit

Put all of Ingredients B into a pot to cook under low to medium fire. Keep stirring with a whisk. I didn’t split up the steps to cook custard and yet it didn’t fail. Just keep stirring and it will soon thicken to a beautiful, glossy custard like in the picture here. Remove from heat and pour it over the pastry. Place the other pastry over the custard, flattened side down. Leave to chill for a few hours.

Put Ingredients C in a bowl and stir it with a fork until the sugar, better and pulp are all incorporated. Then whisk it for a while with the fork until it turns light. It’s very quick and little washing to do. Spread the icing onto the cold slice and cut into smaller pieces to serve.
