Vanilla Yogurt with Oranges & Pistachios
I came up with this dessert (along with the Chocolate Cherry Loaf) for the recent feature that Whole Soy was kind enough to write about me. If you’ve never tried soy yogurt, you’re missing out! It’s really tasty, and it can easily be substituted for regular yogurt in any recipe. I wanted at least one of the recipes I submitted to really feature the flavor of this vanilla yogurt, so I just added a few things to it (some oranges, some chocolate, some “just like honey”…). I also added a little non-dairy sour cream to give it a bit of a thicker texture that I imagine is kind of similar to Greek yogurt, though not quite as thick. Speaking of Greek yogurt, is there a company out there that can please start making some vegan Greek yogurt?! The whole thing only takes about five minutes to make (the hardest part is cutting the orange segments), but it looks and tastes like you spent much more time on it. It’s an elegant and healthy dessert, but don’t let that stop you from having this for breakfast! Orange and “Honey” Vanilla Yogurt with Pistachios and Chocolate 2 6-oz containers vanilla soy yogurt In a medium-sized bowl, whisk together the yogurt, non-dairy sour cream, rice nectar and orange zest. Transfer the mixture to two small serving bowls or wine glasses and top each with half of the orange segments and chopped pistachios. With a Microplane grater, shave the chocolate over the top. Serve immediately, or chill until ready to eat.
