Do enjoy these egg recipes :). *image courtesy from google images 40 Second Omelette Ingredients: 2 eggs2 tbs watermargarineFilling: ham, cheese & tomato Steps: Beat eggs & water together lightly with fork. Heat a little margarine in a non-stick frypan & when hot add egg mixture. When mixture starts to bubble, scrape it in towards the middle of the pan with spatula. When mixture is cooked on the bottom but slightly wet on top, add your filling down one side, close the omelette & slide onto place. Don't overcook, 40 seconds only. Chinese Omelettes Ingredients: 8 eggs, lightly beaten 1 cup shredded lettuce1 cup bean sprouts ½ cup red capsicum, chopped4 green shallots, sliced 2 tbs oil Sauce: 3 tsp cornflour 1 chicken stock cube, crumbled1 ½ cups water 3 tsp soy sauce Steps: Combine eggs, lettuce, sprouts, pepper & shallots in bowl. Heat ½ tbs of the oil in pan & pour ¼ of the egg mixture into pan, cook until set & lightly brown underneath, turn over & brown. Remove & keep warm. Repeat with remaining ingredients. Sauce: Combine all ingredients in pan, stir over heat until it boils & thickens.Serve the cooking dish with sauce. Curried Eggs Ingredients: 4 eggs 2 level tbs butter1 onion 1 apple2 level tsp curry powder 2 level tbs flour1 level tsp salt 2 level tsp sugar1 cup water 1 cup milkSteps: Hard boil the eggs, cool & shell. Melt butter in pan, add diced onions & apple & fry lightly until golden in colour. Add curry powder, salt, sugar & flour. Gradually add milk & water, stirring all the time. Cook gently with lid until apple & onion are soft, add eggs. King Size Omelette Ingredients: 12 eggs 1 cup grated cheese2 slices diced ham 2 rashers diced bacon2 cups diced tomatoes 1 cup diced mushrooms1 onion, finely chopped salt pepperparsley flakes pinch mixed herbs Steps: Beat eggs in large bowl. Melt butter in frypan & pour eggs in.Sprinkle with all the other ingredients. Cook in frypan 30 mins until omelette has risen and is firm to touch. Scrambled Eggs - Microwave Ingredients: ¼ cup milk 1 tbs chopped parsley2 eggs salt pepperSteps: Put milk, parsley, salt & pepper & eggs in microwave jug, whisk lightly. Cook on High 1 min.
