Vegan Burgers: Portobello Mushroom & Vegetable Masala
On the weekends I love to BBQ and experiment with different ways to make veggie burgers. “Veggie burger” might bring about images of those flat, processed, soy protein patties. Don’t worry, you won’t find those here. These are two of my favorites: Portobello mushroom burger served with grilled zucchini & squash, and roasted sweet potatoes. Check out the article below for an amazing marinate for the mushrooms: Grilled Portobello Mushrooms with Spinach And then there’s this fabulous Vegetable Masala Burger served with kale chips and tzatziki dip. If you follow a vegan diet, serve hummus in place of tzatziki. You can find masala burgers in the frozen foods section at Trader Joe’s.
