Vegan Fruit-Topped Chocolate-Almond Clafoutti Cake
Ever since I created my Vegan Fruit-Topped Almond Clafoutti Cake in July, I've been dying to try a chocolate version. Not that I have to have an excuse to make a dessert, but it is just me and my husband and the dogs who can't have chocolate. I finally decided just to give it a whirl for no reason at all and, boy am I glad I did. You can top the plain or chocolate versions with almost any juicy fruit, but I had a big gorgeous purple plum. Though I've never particularly craved chocolate and plum together, I'm here to tell you they are a winning combination. I hope you love it as much as we do for dessert or, because it's not to sweet, breakfast. I'm not sure that it doesn't get creamier the longer it sits in the fridge, well wrapped of course. Once, cooled, I cut it into 8 slices--okay, seven, as I'd already eaten one--and wrapped each slice individually with plastic wrap. I sent a piece home with my friend Katherine after we'd gone for a long walk. She devoured it in the car, pronouncing it a keeper, though saying the slice of plum pulled off in one bite, and asking if that was operator error. I apologized saying I should have told her to wait until she got home and eat it with a fork, as I'd eaten a slice the day before with a fork which easily sliced right through the pieces of plum. She assured me that it was too tempting and would have never made it home. I've added the Chocolate Variation to the original recipe which you can find here.
