Vegan Parmesan & Sniffly Munchi

Hey, I hope you guys are having a great Tuesday! I loved all of your comments on the last post…you guys are so sweet! Glad you liked the apron, and the blackberry pie :-) It was super YUMMY!





I started early this morning with clients. Got home to find my Munchkin is sniffling BIG time. See, I took him to the vet last Monday, he has some issues with his ears, and we needed a little medicine. I am thinking he picked something up there…I love our vet, it’s a cat clinic, very clean…but my lil’ baby lives a pampered life, and is not around other cats…I thought he had a strong immune system….he gets gluten–free, organic, all natural food! I guess I gotta get some kitty vitamins too!!! My poor lil babes, I just want to make it all better for him…I feel helpless :( The good thing is he is still eating, and he was up for lunchtime yoga with Shiva Rea:

VERY light workout today. Yesterday I did HITT on the EFX for 30 minutes. Then a chest/back/abs workout. I am pretty dang sore today. Tomorrows is going to be tough fitting a workout in b/c of my work schedule, so I am hoping I can fit in a quick leg strength workout later or some cardio. It’s doubtful though. Light workout, light lunch:



Spiralized Zuke, Tomato, Fresh Basil (from the deck), with hemp oil and balsamic




and a sprinkle of Cashew Parmesan Cheese:




Vegan Parmesan Cheeze


1/4 Cup Raw, Unsalted Cashews


1 TBSP Nutritional Yeast


Sprinkle of Sea, Celtic or Himalayan Salt



Place all ingredients in Vitamix, or high speed blender, and grind until it’s a cheezy consistency :-)

SOOOOOO excited to read these books! They arrived yesterday :-)



Brendan Brazier is amazing…I admire anyone that can push themselves to that kind of physical limit. I am feeling pathetic lately with my own physical performance. My ankles have been feeling weak, and my legs super tight, so I am trying to fit in a lot more stretching. Don’t get me wrong, I still get in a few of my kick butt workouts, but I am feeling like I should be able to do more. Maybe 29 isn’t being so good to me after all. I want to age backwards!! Hopefully adapting a more plant-based diet will heal my joints (after all the years of abuse, that has put me in this situation now).



Becoming Vegan looks great, because it is written by an RD, that teaches you HOW to eat a healthy plant-based diet. There are definitely unhealthy vegetarians and unhealthy vegans. You can avoid all animal products, but eat a lot of processed foods and sugars. This will help back me up with the whole protein myth (stating that only get complete protein from animals), and help me to deal with those difficult situations and people that do not take kindly to my kinder way of eating. I am not a vegan…I’d like to call myself an 80% Vegan. I haven’t given up fish yet, I don’t really buy it at home, it’s more-so that my hubby and I can still go out to eat, and I can eat healthy, without eating pasta all the time, or at places that do not have a lot of tasty veggie dishes. I am not there yet…but John Robbins book really made me want to swear off Meat, Poultry and Dairy (and pork, which I haven’t had in 15 years): FOREVER!!!!



This was an AMAZING book.  I HIGHLY recommend it to anyone that hasn’t read it! John Robbins was the son and nephew  of the infamous “Baskin-Robbins.” He has dedicated his life to being a vegan activist, which is unbelievable knowing he walked away from the empire he would of inherited had he stuck around. There are some very amazing stories in here…especially the one about the Pig Farmer, that is a close friend of his to this day. It brought tears to my eyes. I don’t want to ruin it for you so I will keep it at that :-)





Speaking of great men, and veganism…I was wrong about the release date of Forks Over Knives (check out that link for anyone that missed my review of the advanced screening). It’s going to be a but of a wait, but I promise you….it will be WELL worth it!!!!Charlene Nolan  from Whole Foods Market (who planned the event I went to last Monday), let me know that March 11 will be the drop date.  You can see if there are any pre-screenings in your area here! I can’t wait to pre-order the DVD and make sure everyone I know gets to see it!!!!
