Vegan ?Shrimp? Cocktail Salad
So I came across these wonderful new vegan products, a vegan shrimp-like meat and calamari-like meat. Both unbreaded and breaded. Of course, I had to take them home to try. They are made by a company called Sophie’s Kitchen. Their website is really cute and informative. I found the products at Whole Foods. Only 2 Weight Watcher Plus Points per serving on these. To make the salad: Spray a nonstick pan with a little olive oil spray, saute thawed package of “shrimp” and add a drop of Huy Fong Sriracha Hot Chile Sauce. Put half of the shrimp atop a salad and drizzle 2 Tbsp of Vegan Ranch Dressing. 2 servings. Weight Watchers Plus Points value: 4 The breaded version is good too.
