Vegetable Moussaka with White Bean Sauce & Spring Roll with Baked Beans
Vegetable Moussaka with White Bean Sauce ( Baked vegetables layered with cheese - a Greek speciality ) Serves : 4 Time required : 30 minutes Ingredients 50 g red pepper 50 g green pepper 50 g yellow pepper 50 g green zucchini 50 g aubergine 20 g herbs 20 g salt 10 g pepper 30 g cheese For the white bean sauce : 20 g butter 10 g onion 5 g garlic 30 g boiled white beans Salt and pepper to taste 10 g herbs 30 ml cream 3 ml lemon juice Method Blanch the peppers and peel off the skin. Slice zucchini and aubergine and grill them till done on both ends. Layer the vegetables with salt , pepper, herbs and cheese. Cook the moussaka in a slow oven for 10 minutes or till cheese has melted. To prepare the white bean sauce : Heat butter and saute onion and garlic for five minutes. Add boiled white beans, salt , pepper and herbs. Stir well. Thicken with a little roux , if required. Finish off with cream. To serve : Serve moussaka in a plate , with the sauce spread over it. Nutritional value of each serving - 116 kcal Spring Roll with Baked Beans Serves : 4 Ingredients 1 can baked beans 3 pancakes 250 g breadcrumbs 25 g carrot, cut into thin strips 3 eggs, beaten 1 tablespoon soy sauce 20 g sesame seeds 15 g spring onions , chopped fine 10 g beans , sprouted 5 g coriander leaves , chopped 5 g garlic , chopped Cooking oil For the pancakes : 180 ml milk 125 g flour 2 eggs 1/4 teaspoon salt 1 teaspoon oil To prepare the pancakes : Mix all the ingredients for the pancakes to a smooth batter. Pour one tablespoon batter in a hot non - stick pan. Turn the pan around to coat it evenly with the batter. When cooked on one side , turn and cooked the other side. Remove from the pan and keep aside. Similarly prepare more pancakes with the remaining filling. To prepare the filling : Heat oil in a pan. Add garlic and lightly fry till brown. Add the vegetables and saute them for two minutes. Add soy sauce and baked beans. Stir well and remove from heat. Keep aside to cool. Final preparation : Place pancake on a plate. Put one tablespoon of the prepared mixture ( filling ) over it and roll it into a cylindrical shape. Seal the edges with a dab of beaten egg.
Mix breadcrumbs and sesame seeds well and keep aside. Dip the pancakes in the beaten egg and roll in breadcrumb - sesame mix. Fry in hot oil till golden brown. Remove from oil. Serve hot with green chilli sauce. related searches : Vegetable
