Vegetarian Lasagna

It's raining, it's pouring...

I love waking up to the sound of the rain- I would have liked it even better if I could have stayed home curled up on the couch with a good book and a cup of chai though! :)

For breakfast, I was craving an English muffin with peanut butter. No surprise there, huh? I also added banana and cranberry apple butter on top, making it oh so much better. The black capsules are my vegetarian source of good fats.


Lunch was a veggie burrito with lots of hot sauce on top. My burrito busted open while cooking... really not very pretty is it? One of these burritos has 370 calories!


My after work/pre-dinner snack: an apple with super low fat cheddar cheese. This cheddar had hardly any fat and didn't taste very good as a result.


While cooking dinner, I busted out the pita chips and roasted red pepper hummus. I had to eat something, my stomach was growling so loud, it scared the cat! I had one serving of chips and two of the hummus.


Pretty good hummus...


For dinner tonight, we had vegetarian lasagna, grilled asparagus and salad with a vinaigrette dressing. Two words: Comfort Food


After dinner, I took some photos of our (fake fiber optic) Christmas tree all lit up...

I have a few more lights to hang up outside and I'll be finished. Well, its been a busy day and so I'm off now to relax a bit before it's time for bed.
