Vegetarian Pot Pie with Biscuit Top
Comfort food doesn't get better than pot pies. Well, actually it gets a lot better, but it is a great way to create something filling, tasty and easy from whatever bits and pieces that you can find in your fridge.
I tend to always have at least 3 of 4 different types of fresh vegetables and a couple frozen ones for soups or whatever the case may be, which tends to work out nicely for stews, soups and baked items. This pot pie is a three dish meal, which for those of you who know me is pretty amazing. I am one of the messiest cooks in the world. A one pot meal to me means that there is only one pot left in the entire kitchen! So this pot pie is not exactly a traditional one, being cooked separately first, not using a bottom crust or puff pastry, but I was not sure what else to call it! It is almost a savory cobbler, with it's topping of buttery biscuits. It has just enough healthy ingredients to make it for the kids but enough flavor that no one will complain. Recipe : Vegetarian Pot Pie with Biscuit topping 1/2 head cauliflower, chopped 2 carrots, chopped 1 cup of chopped mushrooms 1/2 cup of fresh or frozen peas 2 small potatoes, chopped 1/2 cup chopped spinach 1 small onion, chopped 1 clove garlic, minced 1 to 1 1/2 cups of vegetable or chicken broth 1/4 cup of AP flour herbes de provence salt, pepper, thyme any other assorted vegetables that would make you happy Preheat oven to 375. Saute onion over medium heat until translucent, add garlic and saute for 1-2 minutes Add Vegetables and saute for 2-3 minutes, adding spices as desired. Mix chicken broth and flour and add to pot, enough to barely cover the vegetables. Bring to boil and simmer for 15 minutes. Pot should be filled with thick gravy-like sauce with almost cooked vegetables. Taste for spice and salt. Add to a baking pan and top with biscuit mixture. Place in oven and bake for 15 - 20 minutes or until biscuit top is browned. Let sit for 5-10 minutes before serving. Biscuit topping 1 1/2 cup AP flour 1 Tablespoon Baking Powder 1 small pinch of baking soda 1 tablespoon shortening (I used coconut shortening but any will do) 3 Tablespoons of cold unsalted butter cut into small cubes 1 large pinch of salt 1 small pinch of sugar 2/3 cup of milk or buttermilk Sift together the dry ingredients. Cut the butter and shortening into the flour. Mix by hand until it turns into a granular mix. Mix in milk until blended. related searches : Vegetarian
