Ven Pongal
A delicious sunday morning brunch means Ven Pongal and Kathirikai Gothsu at our house and thats what we had this sunday also.
Ven Pongal is a South Indian dish where the rice and moong dhal are cooked seasoned with spices and ghee. This goes well with chutney, sambhar but our favorite is the Kathirikai Gothsu. Serves 2 Ingredients Required: Rice - 1 Cup Moong Dhal - 1/4 Cup Milk - 1/4 cup Salt to taste For Seasoning: Cumin Seeds - 2 tsp Peppercorn - 2 tsp Ginger - 1 tsp Cashews - 10 Ghee to fry How to make? Pressure cook the rice and moong dhal with salt as required, milk and 3 cups of water. The milk makes the pongal more softer and creamier. Mash the pongal and set aside. In a pan, heat little ghee and fry the broken cashews till they are golden in color and set aside. In the same pan, add little more ghee and fry the cumin seeds, peppercorn and ginger, fry for a minute and set aside. Add the cashews and the seasoning to the pongal.
