Vidalia Onion Pie with Mushrooms
![]() This recipe comes from Gooseberry Patch - Our Best Quick & Easy Recipes - and it sounded divine. I liked that the recipe was easy and could be made with a few ingredients. The final result is elegant, but also delicious. It would be great for a brunch or even a nice dinner. I admit that I did not have a Vidalia onion in my possession, so I simply used a sweet onion, and I think that worked fine. Overall, a nice solid recipe that you could adjust and make additions to. 1 large Vidalia onion, halved and thinly sliced 2 cups of sliced mushrooms (the recipe suggests shiitake, but I used button) 1 Tbsp. olive oil 4 eggs, beaten 1 cup whipping cream 1 Tbsp. fresh thyme, chopped 1 1/2 tsp. salt 1 tsp. pepper 1/8 tsp. ground nutmeg 9-inch frozen deep-dish pie crust, thawed Preheat oven to 350. Place thawed pie crust into pie plate and set aside. Sauté onions and mushrooms in hot oil in a large skillet over medium heat for 15 minutes or until tender. Stir together eggs and next 5 ingredients in a large bowl; stir in onion/mushroom mixture. Spoon mixture into pie crust and bake for 45 minutes or until done. related searches : Vidalia
