Watermelon and lime: a fateful meeting
PLEASE NOTE: I am doing some restructuring today to fix a few things! So if you notice any changes, all will be back to normal tomorrow! Thanks! On Friday I posted my Gourmet American Picnic. A meal I plan on making again this week because I enjoyed it THAT much! It was fun to make and next time I'm sure I will change it up a bit too. That is just how I cook! Plus it was so easy to make. Watermelon granita seemed like a natural choice for this meal. I had 2 personal size watermelons and I wanted something new and different. Although it may not have been the fanciest of dishes it was simply delicious! The sweetness of the watermelon was superb. What made this dessert over-the-top-good? Lime. I pureed one whole personal watermelon in the food processor, added the juice of 2 limes, and about 3/4 of a cup of simple syrup (made with cactus honey powder), froze, scraped, froze some more. Next time I will try it with a half cup of simple syrup. When I served it I scraped and scooped, added a wedge of lime, and some Late July organic cream sandwich cookies, which in my book beat the "name brand" version hands down. I originally put the lime wedge on for decoration. As I was eating it I decided to squeeze the juice over it, and it was a mouth full of heaven. The contrast of the sweet and sour was perfect and in my opinion, it made this dessert exactly what it was destined to be: perfect! For my blackened chicken fingers I used Spicy Cajun Catsup, made by an Oregon "family company". They make spices, seasonings, and sauces. I found them at the Better Living Home Show I went to the weekend before last, and loved the flavor, but also the fact that it's made with all natural ingredients, no corn syrup, no fake stuff. I don't like a lot of barbecue sauces because of their ingredients and the sugar content, and quite frankly, the flavor. So this was a refeshing change. It seems they made some changes to their ingredient list and have not updated their website yet, but I'm glad for the change and I will continue to enjoy their sauces!
