Weekend Recap & Meat Free Monday

Hey Gals & Guys! How was the weekend??? Mine was pretty lazy…I need to get back to being productive today. I am finding it hard these days…anyone ever get  like that? Where you know you have a list of 500 things you should be doing, and just spend the entire day watching Weeds. Well, I need some motivation–I hate spending all my time at the computer, that’s what the problem is. I love blogging, and reading my fav blogs, and by the time I am through, a few hours have passed, I need to go to work, get my workout on or whatever..and don’t get all the other stuff I need to get done (on the computer) out of the way!


Saturday night we went into the city to see my sissy in laws new apartment. It’s super cute, and in a great location! A bunch of friends came down, and then we went to The Belgian Cafe for drinks and apps. I was pleasantly surprised  to find they had a lot of Vegan/Vegetarian  options on the menu:



Michael wanted me to take a pic of this , our friend, Scott ordered a Vodka called “Penn 1681” –was handcrafted in Philadelphia…I will die if I drink Vodka, but this looked smooth and nice for him:



I got the most AMAZING thing EVER!! I am going to try and make it this week…the chef came out and confirmed my guess on how to prepare it…

Sunday morning I decided to make something that used to be my Sunday AM tradition when I lived at home. My buckwheat banana pancakes! I did this semi-homemade, and vegan style ;-)




the semi-homemade was because I had this leftover from Mother’s Day when I was making 500 things and wanted a short-cut to the pancakes:



I made flax eggs, used almond milk and agave (it calls for honey, but honey is actually carcinogenic and not digested properly when heated).



Flax Eggs:


1 part flaxseed meal


3 parts water


whisk and let sit in bowl for several minutes to let it get a thick consistency.


They were yummy in my tummy :D



My week has gone to c%*p…because 75% of my clients are away, and I am not, yet again :-(



Which means, Laury is low on funds this week. Yet again. I will make the best of it.starting with, trying to motivate myself to be productive…getting a new business plan together to re-assess…stop stalling, and get things DONE. I have poor time management skills, it’s terrible. I spend to much time doing one task….something I need to work on! Help anyone?? I need more organization and structure in my life. I get my workouts done, get my healthy food shopping and preparation done..its all the other stuff. No more wasting time!



Speaking of… I will be doing some info packed posts in the next couple weeks for you guys…so stay tuned!
