Are you feeling that way too?

With another BFD weekend coming up (Big Football Deal), I am reminding myself to stay on target. 

With some carefull planning and mindfull execution, I will emerge on the other side unscathed.

Weekends are rest days for me.  That usually means no workouts but since I missed one this past week, I will need to get one in. 

It was a mostly rainy week so I was only able to go outside to run on Monday.  Tuesday, Thursday and Friday were spent inside on the e-machine.

I could have gone out to run this morning since there was no rain but, for some reason, I had that e-machine feeling! 

That crazy mixin' up the workouts is really a good idea.  I do tend to get bored easily so changing things up always works in my favor.

Wednesday, however, the day started much earlier than normal and I slept in a little too long and missed my workout.

That fact haunted me the entire day!  I hate it when I miss my morning workout!  It just makes the rest of the day feel weird!  Off-kilter!  Out-of-sorts!  Ya know?

Dunno know which day yet but I'll be gettin' my sweat on sometime during this weekend.  You?

Mindfully staying on target is easy when I find easy, tasty, healthy recipes like this one.

Another winning recipe from Weight Watchers:

Moo Shu Beef Lettuce Cups

cooking spray
1 pound lean ground beef(7% fat)
1 cup chopped onion
2 tablespoons minced fresh ginger root
2 tablespoons minced garlic
1 cup thinly sliced bok choy
1 red bell pepper, thinly sliced
1/2 cup thinly sliced mushrooms
2 tablespoons low-sodium soy sauce
8 leaves bibb lettuce

Coat large non-stick skillet with cooking spray and set pan over medium high heat.  Add beef, onion, ginger and garlic, cook until beef is browned and onion is soft, breaking up meat as it cooks, about 5-7 minutes.
Add bok-choy, pepper, mushrooms and soy sauce; cook, stirring occasionally until bok choy is wilted and pepper is tender-crisp, about 3-5 minutes.
Spoon about 1/2 cup beef mixture into each lettuce leaf.

serves 4
(3 points per serving)

cast of characters
extra veggies are always a good thing

minced ginger, minced garlic, chopped onion, sliced mushroom, sliced red pepper

thinly sliced bok choy

brown the beef then add the veggies

mix 'er up

put on a lettuce leaf

brown rice on the side

so yum-O!

Ground turkey would be good in this instead of the beef. 

Who needs Chinese take out when this is so easy!
