Which Wich? and Yogurt Planet
Good Evening~! It has been a great day of eats as well as activity. My hair feels much better, I am not sure if it looks a whole lot different but the gray is gone and it is not as heavy as it was before. So all in all am happy with the results. For lunch today, I had leftover Greek Quinoa Salad, it was even better today because the lemon dressing really had a chance to marinate the whole salad and tasted super fresh. This is a great salad and plan on making it again soon, especially with the weather getting warmer. We are coming into cool salad weather and picked up another Salad Cookbook at the library to get some new ideas. Greek Quinoa and Avocados Makes: 4 servings Ingredients 1/2 cup uncooked quinoa 1 cup water 2 Roma (plum) tomatoes, seeded and finely chopped 1/2 cup shredded fresh spinach 1/3 cup finely chopped red onion 2 tablespoons lemon juice 2 tablespoons olive oil 1/2 teaspoon salt Spinach leaves 2 avocados, pitted, peeled, and sliced 1/3 cup crumbled feta cheese Directions 1. Bring quinoa and water to a boil in a small saucepan. Reduce heat; cover and simmer for 15 minutes, or until liquid is absorbed. 2. In a medium bowl, stir together quinoa, tomatoes, spinach, and onion. 3. In a small bowl, whisk together lemon juice, oil, and salt. Mix with quinoa. 4. Place spinach on plates with avocado slices and quinoa. Sprinkle with feta. Nutrition facts per serving: 332 calories, 7g protein, 27g carbohydrate, 24g fat (5g saturated), 8g fiber The Kids in Motion Class went really well today and the kids had a great time! We then decided to celebrate Emmet's completion of the TAKS test by going out to dinner at Which Wich? and then heading over to the new Yogurt Planet! Which Wich? is a great little sandwich shop that is quick, cheap and the kids love it. I usually get a turkey sandwich with lots of veggies but they had a new Caprese Sandwich with Pesto on the menu that I wanted to give a try and it was extremely good! I ordered it on whole wheat but that looks like white to me.... I guess it won't kill me! Then onto my favorite- Fro Yo... I love this place so much and have been waiting for it to open at the Hill Country Galleria. I basically work at the mall 5 days a week so know all the in and outs of the mall. That is where I teach my Boot Camps as well as where Hill Country Fitness is located. So we headed over and I am excited to report that the facility is clean and the staff friendly and that I will be frequenting Yogurt Planet at least every Tuesday. My kids have asked if we could come here after every Kid In Motion class... they had to twist my arm to say MAYBE! I am going to have to learn portion control here because it really can be a semi-healthy treat is you don't over do it! They offer fresh fruit (not frozen) and the frozen yogurt is not too bad either. I got my favorite Tart yogurt and then topped it off with fresh blackberries, strawberries, kiwi, mangos, sliced almond, spinkle of coconut and then... a little scoop of chocolate covered pomegranate seeds as well as a tiny scoop of brownies. Oh so good! Very good day of eats and am going to get back to my healthy eating tomorrow! Off to get the kids to do Kumon before heading to bed. Have a great evening. Abby
