Wine Pairing - Carbonnade Flamande
I belive I have assembled a selection of interesting medium bodied wines which should complement nicely with the carbonnade. If you are not able to access any one of these wines, by looking through the list you should be able find "comparables" quite easily with or without the help of your local wine merchant. Bottom line it's about enjoying your meal with your wine and not about big wine brother monitoring your culinary adventures or maybe your escapades? Les Vins de Sélection Domaine André Brunel 2005 Vin de Pays de Vaucluse Grenache Bodegas Protos Ribera de Duero 2005 a tempranillo from the Ribera del Duero region, Spain Côte de Beaune - Villages, Pinot Noir from Burgundy Duck Pond Pinot Noir 2006 from Willamette Valley, Oregon Beaujolais or a Brouilly both use Gamay grape from the Beaujolais region Moulin à Vent, Gamay grape from Beaujolais Region (outstanding) Chinon, Loire Valley (a favorite of mine) Côtes du Rhône Villages, Rhone Valley (blend of Grenache, Syrah and Cinsault grapes) Argentina, Australian or South African Syrahs (you can't go wrong with either) Note: If you are a beer lover here is a quick thought: Think about serving the same beer as the one cooking in your carbonnade.
