Winty Minty Coal Cookies

These little dark squares of rich dark chocolate cookies are sandwiched with a minty swirl of not too sweet luxury cream and the result is..... non stop popping! Hehehehe...

As for the cookie, this is not a crispy crunchy texture but rather a shortbread texture. The reason being is that I have omitted shortening from the recipe... yah, shortening is trans fat and they are very bad news to your heart and arteries! Infact, a lot of places around the world has started to get tough with this product by banning it completely. Hence, the texture is more like shortbread and yes, it will take people awhile to get used it...

Anyway, the feedback from sampling exercise was very encouraging and perhaps next year, I will sell this in a big scale! Woo Hooo!!!
