Howdy-ho bloggers! I am happy to announce that my fridge is ripe and ready for action! I made a run to Whole foods to get the necessities, including this glamorous bunch... I always have to have fresh flowers somewhere in my apartment, they bring such life to my humble abode :) I tinkered about the floral section for about an hour trying to choose. I just love hydrangeas, and I know they fit into the one and only vase I currently have! The yellow guys in the center are Oncidium Orchids, aren't they gorgeous? Just say yes, they we're expensive. Note to self: NEED NEW VASE Since I pooped out on the creative bud last night...I took on the challenge for tonight's dinner instead! I present you with...Cafe Gitane- ala Caroline! Moroccan Couscous blob, hummus, and broccoli raab. All I was missing was our cute waiter! ?1 small eggplant ?1 small potato ?1 small red onion ?1 bell pepper * ?olive oil ?sprinklin of cumin ?salt n pepa ?herbage of choice Chop, chop, chop, then Roast those babies at 400º for about 45 minutes. Then add: ?about 1/4 cup of pine nuts ?handful of sultanas Turn off oven, but leave in veggies to keep warm. Prepare 1 cup couscous Combine both over Med.-Low heat EAT! *Note: I used a prepared roasted pepper, so I added it with the vegetables at the end. Oh, and If anyone's keeping tallies, I gobbled this guy down in the car ;)![]() Thaaaaaat's all folks!... ...Unless of course there's more
