I'm kind-of in a rush tonight since I'm leaving town tomorrow, so let's make this snaaaapy.  Started my morning off with 40 minutes of power yoga.  Dang.  It worked me.  The yoga series I've been doing was a lot slower and more 6:00am worthy than this power yoga.  However, I loved stretching my muscles and having them slightly quiver first thing in the morning.  Off to breakfast, another bowl of oatmeal.  What can I say?  I made a bunch steel cut oats, so I want to use them up.  Plus is takes no time whatsoever since they're already made.





I bring to you dried fruit oatmeal.  In my mix:
1/3 cup steel cut oats2 chopped dates3 chopped apricots + 1 straight into my mouth1 tsp dried cranberries1 tsp unsweetened coconutMmmm!  All the sweetness going on was quite nice.  I couldn't really make out the distinct flavors of each piece of fruit, but they all melded together very nicely.  Me like.  My work day was good.  My doctor had a faculty meeting and updated me why physicians over prescribe antibiotics.  He (the doctor) told me in a nutshell that physicians over prescribe antibiotics because when a patient comes to clinic and has a virus, most patients aren't satisfied with the answer of "stay home, take Tylenol, you have a virus."  Instead, they feel like the doctor didn't do anything for them (i.e. medicate them) and they get upset that they had to take time to go to the doctor, pay a copay and then walk out empty handed.  He also told me some other disturbing stories about the pressures doctors are under when it comes to prescribing antibiotics when it's not necessary.  He is a caring doctor and doesn't over prescribe, but there are so many doctors who do just to make the patients happy which isn't practicing medicine.


Anyway, enough of that, this was supposed to be quick.  Lunch was AWESOME!

Have I told you I love pears?  Cause I do.  I actually sprinkled cinnamon on this after I snapped the picture.  Did you know that cinnamon is really good for you?  Google it.

Dinner was his and her's shepherds pies.  His:

 
 
Greenwise ground beefLentilsCorn1 chopped carrotMashed potatoesCheeseI browned the meat, put it in the baking pan, added a bit of chicken broth and flax, heated up the corn and lentils and added those to the pan.  Then I chopped the carrot and threw it in.  Then made the [instant] mashed potatoes and baked it (along side mine) at 350 for 20 minutes.  I added the cheese during the last 5 minutes.

LentilsPeas & cawwots (Forest Gump...anyone?  Brittany will get it...)OnionPUMPKINI basically did the same thing as Thad's.  I heated up the peas & carrots and onion, then added chicken broth and flax seed meal.  Then I combined the peas/carrots/onion mix with the lentils and topped it with PUMPKIN.  I also sprinkled some nutmeg on top and baked it along side Thad's.  Delicious!
 
As I said, I'm going out of town so I made the big one for Thad to last him the weekend since he's not leaving town.  I'm going to Disney (go figure) with my parents.  We're going to the Epcot Food & Wine Festival.  I actually went last year on my bachelorette party.  I'm so excited!  Thad didn't want to come though.  Again, he's not a huge fan (or even really a fan at all) of Disney and he's not a foodie so this trip didn't appeal to him.  When my mom told me her and my dad were planning on going, I timidly asked if it was a romantic getaway or if kids were allowed.  She said I could come :).  I doubt I'll blog while I'm down there since Disney internet costs $10 per 24 hours (I know, I know).  We're actually staying at the Swan and Dolphin Resort which isn't technically owned by Disney so they may have a different wifi/internet set up than I'm used to at Disney, but I doubt it.  Anywho, I'll recap it when I get back on Sunday if I don't blog while I'm down there.  I'll be eating my way around the world at Epcot ;).
