![]() Zlevanka je tradicionalni desert sjeverne i sjeverozapadne Hrvatske. Mo?e se pripremiti na bezbroj razli?itih na?ina i uvijek je jednako ukusna. Zlevanka mo?e biti slana ili slatka, sa ili bez nadjeva. Mo?e se pripremiti od kukuruznog ili p?eni?nog bra?na, pa ?ak i p?eni?ne krupice. ?esto se me?u sastojcima na?e i svje?i sir, no ipak se ?e??e priprema sa mlijekom i vrhnjem ili jogurtom. Ona mo?e biti beskrajno jednostavna (ili prosta, kako bismo mi Zagorci rekli ), no ako je oplemenimo raznim dodacima i za?inima ona se pretvara u bogat i rasko?an desert dostojan slavljeni?kog stola. Tajna dobre zlevanke je navodno u tome ?to se radi od oka, odnosno sastojci se nikad ne va?u niti ne mjere. Prave doma?ice i kuharice uvijek su znale procijeniti savr?enu gusto?u i konzistenciju tijesta. Ja sam sastojke za svoju zlevanku ipak mjerila, ba? kao ?to uvijek mjerim i sastojke za pala?inke. Nisam sasvim sigurna ?to to govori o meni i mojim kulinarskim sposobnostima. No dobro, ne?emo sad o tome :) Vratimo se mi radije na zlevanku. Dakle, osnovni recept za zlevanku s jabukama oplemenila sam limunovom koricom, cimetom i klin?i?ima i tako dobila prekrasno aromati?an i osvje?avaju?, a jo? uvijek vrlo jednostavan i tradicionalan desert. ![]() Ina?e, prvu fotografiju u nizu ?aljem na Click, photo event kojeg su pokrenuli Jai i Bee sa bloga Jugalbandi. Zlevanka s jabukama za 2 osobe 1 jaje 3 ?lice ?e?era 1 vanilin ?e?er korica jednog limuna prstohvat mljevenih klin?i?a 1/4 ?li?ice mljevenog cimeta 1 jabuka 450ml teku?eg jogurta 25g o?trog bra?na 1/4 ?li?ice sode bikarbone prstohvat soli 100ml kiselog vrhnja ?e?er u prahu (ili kristal ?e?er) za poslu?ivanje ![]() Namastite manju vatrostalnu posudu ili lim za pe?enje. Zagrijte pe?nicu na 180°C. Jabuku ogulite i naribajte. Pjenasto umutite jaje sa ?e?erom i vanilin ?e?erom. Dodajte koricu limuna, cimet, klin?i?e i naribanu jabuku te dobro promije?ajte pjenja?om. Bra?no pomije?ajte sa sodom i prstohvatom soli te lagano umije?ajte u smjesu jaja, ?e?era i jabuka. Na kraju umje?ajte jogurt te smjesu izlijte u pripremljenu posudu za pe?enje. Kiselo vrhnje umutite pjenja?om dok ne postane kremasto, a potom ga ravnomjerno rasporedite po vrhu. Pecite 45-50 minuta tj. dok zlevanka ne dobiju lijepu boju i dok ne o?vrsne. Poslu?ite mlako ili ohladite na sobnou temperaturu. Prije poslu?ivanja pospite ?e?erom u prahu ili kristal ?e?erom. ![]() Verzija za ispis Zlevanka is a traditional dessert from northern and north-western parts of Croatia. There are many different versions of zlevanka and all of them are delicious. Zlevanka can be sweet or savory, it can be made with corn flour, regular cake flour or even semolina. It is usually made with milk, yogurt or sour cream, although it can sometimes also be made with cottage cheese. The beauty of zlevanka lies in the fact that it is an incredibly simple dish, yet it can be transformed in a rich dessert within seconds by adding fruit, nuts or spices to the basic recipe. The secret of a good zlevanka supposedly lies in the fact that the ingredients are never weighed or measured. A good housewife and a cook can tell the perfect consistency of the batter without measuring the ingredients. I, however, did measure and weigh all the ingredients for this zlevanka, although I am aware how that could be interpreted in terms of my culinary abilities :) Anyway, I started off with a basic recipe for an apple zlevanka and spiced it up with some lemon zest, cinnamon and cloves. The result was a beautiful dessert that was still very simple and traditional, but also fresh and exploding with flavor. Apple Zlevanka serves 2 1 egg 3 tbsp. granulated sugar 1 bag of vanilla flavored sugar (10g) zest of one lemon pinch of finely ground cloves 1/4 tsp. ground cinnamon 1 medium sized apple, peeled and grated 450ml liquid yogurt 25g cake flour 1/4 tsp. bicarbonate of soda pinch of salt 100ml sour cream powdered (or granulated) sugar to serve Preheat the oven to 180°C. Butter a medium sized baking dish. Whisk the egg with sugar and vanilla sugar. Add lemon zest, cinnamon, cloves and grated apple. Mix until incorporated. In a separate bowl mix together flour, bicarbonate of soda and salt, then fold it into the apple mixture. In the end, add liquid yogurt and transfer the batter into your baking dish. Whisk the sour cream until creamy and spoon it onto the surface of the apple batter. Bake for 45-50 minutes or until it sets and gets a nice brown color. Serve warm or cooled down to room temperature. Sprinkle with some powdered sugar or granulated sugar before serving. Printable version
