Zucchini Bread & Two Banana Breads
I have a ton of zucchinis in the fridge just crying out to be made into zucchini bread. Of course I also have a bunch of bananas that are getting pretty ripe. *Sigh* I just spend two days cleaning my kitchen, including running the hard floor cleaner?naturally, I now can't bear the thought of cooking and dirtying it! These are the recipes that I'm debating between: Ingredients 1½ c pecans (chopped) 2 TBS lemon zest ½ c brown sugar 2 tsp of vanilla extract 3 eggs/1 c egg substitute 3 c all-purpose flour 1½ tsp cinnamon ½ tsp baking powder 1 tsp salt 1 c granulated sugar 1½ tsp baking soda ½ c butter 3 c zucchini, finely grated (about 3 medium sized ones) Directions Preheat oven to 350 F. mix the pecans and lemon zest. Set aside. Next, beat the butter until it is creamy and fluffy. Add in the sugar and brown sugar and beat the mixture until it comes together and doesn't crumble. Add the eggs one at a time and mix well. Then add in the vanilla extract and the grated zucchini and mix at slow speed. In another bowl, mix together the flour, baking powder, baking soda, cinnamon, and salt. Take this mixture and mix it into the zucchini mixture. Fold in the pecans and zest. Split the batter between two loaf pans. Bake for about 40 to 45 minutes. After the bread is baked take it out and let it cool in the pan for about 10 minutes. Then transfer the bread onto a wire rack to complete the cooling. Ingredients 1 c granulated sugar 8 TBS (1 stick) unsalted butter, room temperature 2 eggs 3 ripe bananas 1 TBS milk 1 tsp ground cinnamon 2 c all-purpose flour 1 tsp baking powder 1 tsp baking soda 1 tsp salt 1 c pecans, chopped Directions Preheat the oven to 325 degrees. Cream the sugar and butter in a large mixing bowl. Add the eggs one at a time, beating well after each addition. In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt. Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears. Pour batter into greased bread pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing. OK, so neither one won?my parents dropped off the bread machine, so I found and embellished a banana bread for bread machines recipe. Ingredients 3 bananas, broken into pieces 2 eggs/½ c egg substitute 3 TBS melted butter 1 tsp vanilla 1 tsp cinnamon ½ c granulated sugar ¼ c dark brown sugar 2 c flour 1 tsp baking powder ½ tsp baking soda Directions Add ingredients in the order listed. Put on mix for about 5 minutes, scraping the sides regularly, so that the dry ingredients are all incorporated. Either put it on the ?light" setting or just bake it for about an hour or until an inserted toothpick comes out clean. Cool in the pan for 10 minutes, then remove from pan and finish cooling. It?s baking as I write this, so I?ll post a verdict shortly. Definitely a keeper! You may want to cook it on medium and stop it when it passes the toothpick test?my bread machine's light setting left it a bit undercooked. It tasted pretty much like standard banana bread, which made it delicious to wake up to! And the smell of it baking was also a delightful wake-up call.
