I'm doing the Bread Baker's Apprentice Challenge. Nicole of Pinch My Salt has invited us to join her in baking our way through Peter Reinhart?s book: The Bread Baker's Apprentice: Mastering the Art of Extraordinary Bread . We will be backing one bread per week. The first bread wa the Anadama. I have never heard of that bread before I opened the book. It's pretty simple to make. I have a list for myself of things I want to learn and be good at, and one of them is to learn how to bake Artisanal breads at home. So I did my research on what book to get to teach myself, and The Bread Baker's Apprentice by Peter Reinhart was my best choice. I bought the book about a couple of years ago when I decided that I had enough of clay/pottery, but two years after, the[...]http://adoseoffrosting.blogspot.com/2009/09/b...

The next bread in the challenge was Italian Bread. I chose to do rolls instead of a loaf, just for kicks. These came out so good. I ignored Mr. Reinhart's admonition to let them cool for an hour and instead ate mine right out of the oven. They went perfectly with the braised shortribs that we had for dinner. First, you make a biga, which is just[...]http://feedproxy.google.com/~r/RavenwolfLodge...

apprendista /apprentice And we're off....Monday got a- goin ' and the day became better and better. The highlight? The email I received from my sister with lots of pictures. My niece, who's birthday is this Friday, had her slumber party this past Saturday. T called me first thing that morning to thank me for the present I sent and told me all about the Twinkie cake she made. I[...]http://melecotte.blogspot.com/2009/06/bba-bre...

After seeing so many beautiful Artos breads in many beautiful shapes I feel ashamed of my silly buns but they look much better than my braid and are simpler to hide in the freezer ! I really enjoied this recipe and the smell that came out of the oven when it was baking. I made it plain with the spices and orange zest but without dried fruits and nuts and maybe next time I'll add some[...]http://gattifiliefarina.blogspot.com/2009/06/...

Here I come with another misplaced entry Italian Bread ! Wow this is something I'm saying too much but it is Peter Reinhart fault : his recipes are great !! I wouldn't know what bread he refers to saying this bread is Italian; it reminded me of two breads I used to like as a child ( the funny thing is that they are called Corean and Indian 'pane coreano e pane indiano' !) because[...]http://gattifiliefarina.blogspot.com/2010/01/...

I know it may seem that I don't know my alphabeth and posted kaiser rolls before french bread, but my first french bread was so awful I had to wait a few days to try it again !! I used Pate Fermentèe and a little yeast and I'm afraid I overfproofed it a bit or I'm very bad in slashing or both. The bread was fabulous anyway and I really want to make it another tons of time so I'll get[...]http://gattifiliefarina.blogspot.com/2010/01/...

It's World Bread Day! This event, created by Zorra at 1xumruhren bitte, oday bakers all over the world have baked loaves upon loaves to honor the art of artisan breadmaking. And in case you were wondering, artisan means hand-made. So every homemade loaf is artisan bread, even though usually most people use the term in reference to crusty, rustic, or sourdough loaves. You[...]http://feedproxy.google.com/~r/blogspot/PtTG/...
