I can't say that I like Fruitcake so I don't even bother to make it. But I do sometimes find myself with leftover dried fruit and nuts that would normally go into the making of fruitcake. Last fall I made my very first fondant cake and this was the finished product. I made this cake for my father-in-laws Birthday; he is a doctor if you couldn't guess. :) Working with fondant was a lot of fun; not as hard as I thought it would be.
