Carrot burfi (gajar ki burfi)

This is very easy to make and tasty carrot burfi.

Ingredients

Grated carrot-2 cups
Sugar-1/2 cup
Water-1/4 cup
Ghee-4 tbsp.
Cardamom powder- 1/2tsp
Raisin-5-6
Cashew-5
Almond-5

Preparation

Fry the cashews and almonds with little ghee and keep aside.

Heat ghee in a heavy bottomed pan

Fry grated carrot and stir till all the water evaporates from it.

Another pan makes one string sugar syrup, add carrot into, mix it well.

Keep stirring continuously till the mixture leaves side of the pan.

Starts bind together, finally it becomes like dough.

Now add cardamom powder fried cashew, almonds and mix it well.

Pour on greased plate and spread it evenly.

Leave it to set it for some time.

When it set firmly. Cut it into desired shape.

Enjoy your carrot Burfi!!!
