Ingredients

- 2 cups sugar
- 1-3/4 cups all-purpose flour
- 3/4 cup HERSHEY'S Cocoa
- 1-1/2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING (recipe follows)



FROSTING:
- 5 ounces unsweetened chocolate
- 1 cup butter
- 1 egg
- 3 cups confectioners
- sugar 2 tablespoons malted milk powder
- 1 teaspoon vanilla
- 1 ½ tablespoons milk
- Pinch of salt

Preparation

Step 1

Heat oven to 350°F. Grease and flour two 9-inch round baking pans or fill 2 cupcake pans with 30 liners.

Step 2

Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl.

Step 3

Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.

Step 4

Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter.

Step 5

Bake 22 to 25 minutes. Cool completely. Frost. About 30 cupcakes.

Step 6

To prepare the frosting: Place the chocolate in a small microwave-safe bowl and microwave on high heat for 1 minute, then stir. If the chocolate is not all melted, place it back in the microwave for 15 seconds at a time, stirring after each time, until it is completely melted. Be careful not to let chocolate start to bubble or it will burn and get gritty.

Step 7

Place the butter and eggs in a large bowl and beat with an electric mixer on medium speed for 2 minutes, or until fluffy. Add the confectioners? sugar, malted milk powder, and melted chocolate and mix for 1 minute, and mix until even in color. Add the vanilla, milk, and salt and mix for 2 minutes, or until fluffy.
