Ingredients

- 1 libra dried Black Eyed Peas
- 1/2 Ham Hock, about 6-7 oz
- 6 cups of Water
- Salt and Pepper

Preparation

Step 1

Soak the black eyed Peas in water over night. Drain and rinse the peas. Bought a 14 oz ham hock and cut it in half.

Step 2

Froze the other half for another time but you could use the whole thing for a stronger flavor. Add the water (about 6 cups) and the ham hock to a large pot.

Step 3

Bring to a boil and cook the ham hock, uncovered, for about an hour; until it is starting to fall apart.

Step 4

Then add the drained and rinsed peas. Cook over medium heat for 2-3 hours, until they are soft and to your desired consistency.

Step 5

Some ham hocks render more salt than others. To avoid over salting, add salt and pepper towards the end of cooking process.

Step 6

Remove the hock from the pot before serving.
