Watermelon, cucumber, olive and feta salad

Ingredients

Number of serving: 2
Small watermelon, ½

Feta cheese, 200 g

Purple radish, 2-3 (thinly sliced)

Cucumber, ½ (cubed)

Pitted black olives, 60 g

Fresh mint, a small bunch (leaves picked)


Dressing:

Extra virgin olive oil, 4 tablespoons

Lemon juice, 2-3 tablespoons

Honey, 1 tablespoon

Toasted sesame seeds, 1 tablespoon

Sea salt and freshly ground black pepper to taste

Preparation

  • For the watermelon, you can cut into square or use either a melon baller or a tablespoon to create scallops along the watermelon flesh of the watermelon.
  • In 4 individual bowls, arrange equal and enough portion of watermelon, cucumber, feta cheese, sliced radish and black olives.
  • To prepare the dressing, combine all dressing ingredients in a jam jar. Cover and give it a good shake.
  • Drizzle enough dressing onto each portion of salad in each bowl. Garnish with some mint before serving.
