CMC and GMS are additives usually used to make ice cream.
CMC stands for Carboxy/Methl Cellulose and is a stabilizer, a binder agent.It's also used in cake decoration. GMS stands for Glycerol Mono Sterate and it's a softener.
The recipe should say the correct doses to use.
But, as a reference for ice cream, for 1 liter of milk, use 2 tbsp GMS powder and 1/4 tbsp CMC powder.
