Coconut Burfi ? a microwave recipe
So I have a confession to make: I have been really suspicious of Microwave cooking, because I always felt the flavour or consistency might go wrong… But considering that I have a food blog, I can’t let anything pass me by especially after seeing lots of MW recipes online! So today, I am presenting to you an easy, yummy, sweet recipe called Coconut Burfi. Those from India might have childhood coconut burfi memories, I definitely remember eating them – they are just so wonderful! I had a lazy afternoon and I decided to put my microwave to the test. The result was stunning. Might be a bit suggary for some, so you could reduce the sugar amount a bit. Ingredients: Desiccated Coconut – 1 cup Sugar – 1 cup Water – 1/2 cup Clarified Butter – 2 tsp Cardamom powder – 1 tsp Rava – 2 tsp In a microwavable bowl, mix the sugar and water and cook on high for 10mins.
