Ingredients:
2 c. all-purpose flour
1 tsp. baking powder
¼ tsp. salt
½ c. (1 stick) butter, softened
1 ¼ c. granulated sugar
1 lg. egg
1 egg yolk
¼ c. key lime juice
1 ½ tsp. grated lime peel
1 c. white chocolate chips

Preparation:
Preheat oven to 350ºF. Lighly grease cookie sheets. Sift together the flour, baking powder and salt. Set aside. In large mixing bowl, cream the butter and sugar with mixer on medium speed until light and fluffy. Add the egg and egg yolk, beating until creamy. Beat in the lime juice and peel. Reduce the mixer speed to low and gradually add the flour mixture. Mix just until combined. Stir in the white chocolate chips. Cover and refrigerate dough for 1 hour if the dough appears too soft to handle. Roll dough into ½-inch balls. Place on prepared cookie sheets, spacing 2-inches apart. Bake for 8-10 minutes or until lightly browned. Transfer to wire rack. While still warm, sift powdered sugar over cookies. Cool completely and store in an airtight container. Makes about 30 cookies.
